Add JSON library for Scala 3

scala.util.parsing.json.JSON has been removed from Scala 3, which means there are no built-in JSON libraries for Scala anymore. However a replacement JSON library isn't added to the Scala 3 runner yet.

There are a lot of possible choices, but only a few libraries that have stable releases that support Scala 3:

• jsoniter
• zio-json
• jackson-module-scala (with a caveat)

Others are either experimental, or hidden in RC:
