Feature: Upgrade crossplane to at least v2

Problem Statement

According to cnoe-io/stacks/blob/main/crossplane-integrations/crossplane.yaml crossplane version 1.15.0 is currently supported.

The crossplane version should be bumped to v2 at least due to significant architectural changes.

Possible Solution

Analyze consequences of change and apply change accordingly.
