🚀 Feature Request: Allow more flexible esbuild version

Describe the solution

The esbuild dependency for packages in this monorepo is locked strictly to 0.17.19. This means that multiple copies of esbuild need to be resolved when using these packages alongside other tools (such as Vite and Storybook) that require newer versions. Can the version here use a caret (^0.17.19) so that Cloudflare tools can use the same esbuild version as other tools?

I think the reason why it's lock is because changes are not trivial and require some update on the wrangler side.

But ESBuild will be updated in wrangler 4
