Update project license from Apache-2.0 to MIT (Effective 2026)

As of January 1st, 2026, the project license is transitioning from Apache-2.0 to MIT.

Changes required/implemented:

• Update LICENSE file to MIT with 2026 copyright.
• Update package.json license field to MIT.
• Add license history to README.md (Apache-2.0: 2018–2025, MIT: 2026–Present).

Notes:
The project was licensed under Apache-2.0 for its first 7 years (2018–2025). This change ensures a more permissive licensing model for future development starting in 2026.
