Option to choose Bitcoin Knots #897

The docker install of btcpayserver installs bitcoin core.
Users and merchants prefering to use bitcoin knots would need to play a bit to get it done.

Since Bitcoin Knots is a drop-in replacement, can we make an option for users to pick core or knots?
