[Task]: Clarify how parameters work in table input

What needs to happen?

Hello guys,
as discussed here, I think it would be nice to clarify in the docs how parameters impact the table input and the subsequent transforms.
In particular, while developing a pipeline it is almost mandatory to set the parameters, otherwise it's impossible to see output fields from the transform that uses such variable.
A line or two on this topic would be beneficial I think :)
