docs: add Chinese docs for AI plugin docs

Current State

All plugin docs under AI category currently just have English - For instance https://apisix.apache.org/zh/docs/apisix/next/plugins/ai-proxy/

Desired State

Will need Chinese docs.

Hi @tysoncung, you only need to provide the corresponding Chinese documentation based on the content of the English documentation.
