Need nested functions in acquisition and generate_xGrams for storing processed data for later access

Eventually, we will a buttload of coherograms and spectrograms, and we'll need to have a function for saving those, and maybe even functions for quickly reconstituting them into workspace. Same is true for windowed acquisitions from gatherWindowsOfData. Sort of doubting RAM will be able to hold all data we plan to average. It will probably have to import in chunks, add to total, and then de-commission.
