Add Simple Analytics script to Sphinx config

Add html_js_files to docs/source/conf.py to include the Simple Analytics CDN script in the generated docs HTML. The script is loaded with async and defer attributes to avoid blocking page rendering and enable basic analytics for the documentation site.
