Allow specifying which models should be pre-loaded when running `ami api` or `ami-worker`

• Add an option to the CLI for specifying which pipelines should be loaded & available
• Show which pipeline choices are valid options in the CLI help
• Allow specifying the list of pipelines as settings (or env vars, following the existing pattern in the repo)
