Overdue Task Processing: Incorrect Date Calculation

Describe the bug

If you have a task on 20 February 2025, and you want to create a follow-up task:

• for "this week" -> then the plugin incorrectly adds a follow up task in the previous week (9 February to 15 February)
• for "next week" -> then the plugin incorrectly adds a follow up task this week (16 February to 22 February)

The error occurs on both macOS and iPadOS.

Firstly, please remove the boiler plate text in your issue.

Week handling in NotePlan is notoriously difficult. You'll need to give details of what week settings you have set in NotePlan and in macOS before the author can look at this.

I've done some more digging and have found the following:

1. The calculations seem correct when the "Start Week On" setting is "Sunday"
2. The calculations for "this week" and "next week" are incorrect when the "Start Week On" setting isn't "Sunday" (I use "Monday"). These incorrect calculations occur irrespective of whether the "Week Calculation" setting is ISO (Legacy), System, or ISO Standard
3. The problem persists on macOS, iPadOS and iOS.
