chore(release): 1.6.0

- Version 1.6.0 (pyproject, version.py, viewer); viewer bundle rebuilt.
- CHANGELOG: [1.6.0] - 2026-10-18, with a summary: the consolidation
  release, released quietly while the viewer is redesigned for v1.7.0;
  outputs differ from v1.5's because the default models changed;
  v1.6.0-rc1 was the last version with openai-whisper.
- CITATION.cff: 1.6.0, and the Zenodo concept DOI the README cites.
- Whisper device-choice tests no longer load the real default model:
  since it became the 1.6 GB large-v3-turbo, loading it on CPU inside
  the full suite ran the container out of memory.
