[Feature Request]: PaddleOCR available for parser

Feature Request Description

As another SOTA-level parser PaddleOCR out there, it would be great if RAG-Anything support it as one of available parser options in addition to "minerU" and "docling"

Implemented in PR #199

It adds optional parser="paddleocr" support with docs, optional extras, and
CI-safe tests.
Happy to iterate on any maintainer feedback.
