User story

As a user, it would be greatly useful to override detected variables from config with my own values for alerting purposes

Further information

Despite setting a servername in _common.cfg and mcserver.cfg, LGSM insists on using its own values detected from Minecraft's server properties. Because Minecraft permits formatting the server name with non-printable characters, this results in LGSM sending Discord alerts and console output that contains non-printable characters.

Being able to override this with my own value would eliminate this problem.
