As a system, I want to log instances where extracted data is missing or incorrect, so that I can track patterns and improve future extraction accuracy.

Acceptance Criteria:

  • Log entries capture document type, field name, and error type (missing, incorrect).
  • Devs can pull error logs for analysis.
  • Logged errors are stored for later training improvements.
