Carry out POC testing & document our understanding of POC accuracy

Description

Define a plan for testing accuracy of current POC for up to three different types of forms: W2s, paystubs, and DD Form 214.

User Story

As a development team, we want to understand how accurate the POC is and how it produces accuracy results so we can improve the accuracy in the future.

Testing: We believe the PoC has basic working functionality and is extracting data with some level of accuracy.
