validation: test USDC invoice with assetIssuer

Goal

Add a passing parse test for a valid invoice payload using assetCode: 'USDC' and a valid issuer StrKey.

Context

Multi-asset invoice validation is defined in backend/src/utils/validation.ts.

Acceptance criteria

• One Vitest success case in backend/src/utils/validation.test.ts
• Uses a valid Stellar issuer public key format

Out of scope

• Asset allowlist enforcement in contracts
