Docs: Smart Contracts — write contract interaction guide

There is no documentation on how to interact with the deployed contracts.

Tasks:

• Write docs/contracts.md covering: contract addresses (testnet/mainnet), function signatures, example stellar-cli invocations for each function
• Document event schemas for all emitted events
• Add a JavaScript/TypeScript code example for calling each contract from the backend
• Document the credential issuance flow end-to-end
