Update config.yaml

The config.yaml file contains the location of ancillary files generated from forcings, amongst other files. For each relevant CMIP7 forcing, update this file to contain the destination path of the corresponding ancillary file, including the date directory.

In the pre-industrial example, the access-esm1p6 config paths are currently:

In a meeting about this (meeting summary) it was decided to carry out this as a manual step.

The approach will be to create a script within a task of the CMIP7 Cylc workflow, that can be run manually to carry out all steps needed for the update of the config.yaml.

The file atmosphere/um_env.yaml also needs to contain filenames consistent with those in config.yaml.
